Jan 09, 2016· Last weekend, I ordered some flour from Camas Country Mill, a familyowned stone mill in Eugene, Oregon, whose millers are also farmers of the wheat they mill. Among the flour I ordered was 12 pounds of Edison, a hard white spring variety developed by the WSU Bread Lab. Soon after I got the flour, I mixed a batch of 100g flour 95g water to test its absorptive capacity.
